I love saving time and money when I need to feed my family. This is very easy to put together. My prep time was about 30 minutes. This is so delicious...everyone will be coming back for seconds!
What you need:
- 1 lb. macaroni elbows
- 1/4 c. sour cream
- 8 oz. cottage cheese
- 4 oz. cream cheese
- 1/3 chopped onion
- 1/2 c. Parmesan cheese
- 1 tsp. garlic powder
- 28 oz. spaghetti sauce (with or without meat)
- Mushrooms, green peppers, etc.
- Italian cheese (shredded)
- Salt and pepper to taste
What to do:
1. Preheat oven to 350 degrees. Lightly spray 9 x 13 baking dish with non-stick spray.
2. Cook pasta...leaving a little bite to it.
3. In a mixing bowl, combine sour cream, cottage cheese, cream cheese, chopped onion, Parmesan cheese, garlic powder, salt and pepper.
4. Coat bottom of baking dish with a little of the spaghetti sauce. Put half of the cooked macaroni in the baking dish.
5. Spoon the cheese mixture over the top of the pasta.
6. Layer the other half of the macaroni on top of the cheese mixture.
7. Pour the spaghetti sauce over the pasta covering all of it.
8. Sprinkle on any veggies you want to add. I added mushrooms to mine.
9. For best results, cover and set in refrigerator over-night, but not necessary.
10. Top with cheese, cover lightly with foil and bake at 350 degrees for approximately 45 minutes. Remove from oven, remove foil and return to oven. Bake an additional 10 minutes or until brown.
